Passion Fruit Cheesecake
Passion Fruit Tart Recipe
Ingredients:
For the Crust:
- 150 g graham cracker crumbs (or digestive biscuits)
- 50 g granulated sugar
- 115 g unsalted butter, melted
For the Passion Fruit Filling:
- 1 can (397 g) sweetened condensed milk
- 120 ml heavy cream
- 4 large egg yolks
- 2 tablespoons (about 16 g) passion fruit powder by @theorganiclabs
- 120 ml fresh passion fruit juice (or water if juice isn’t available)
- 1 teaspoon (5 ml) vanilla extract
For Garnish (optional):
- Fresh passion fruit halves
- Edible flowers, such as yellow roses
- A sprinkle of passion fruit powder
Instructions:
1. Prepare the Crust:
- Preheat your oven to 180°C (160°C fan/gas mark 4).
- In a medium bowl, combine the graham cracker crumbs (or crushed digestive biscuits) and sugar.
- Pour in the melted butter and mix until the crumbs are evenly coated and look like wet sand.
- Press the crumb mixture into the bottom and up the sides of a 23 cm tart pan with a removable bottom.
- Bake for 8-10 minutes, until the crust is lightly golden. Remove from the oven and let it cool while you prepare the filling.
2. Prepare the Passion Fruit Filling:
- In a large mixing bowl, whisk together the sweetened condensed milk, heavy cream, egg yolks, and vanilla extract until smooth.
- Add the passion fruit powder and fresh passion fruit juice, and whisk until fully incorporated and smooth.
- Pour the filling into the cooled crust.
3. Bake the Tart:
- Bake the tart in the preheated oven for 20-25 minutes, or until the filling is set but still slightly jiggly in the center.
- Remove the tart from the oven and allow it to cool to room temperature.
- Once cooled, transfer the tart to the refrigerator to chill for at least 2 hours, or until fully set.
4. Garnish and Serve:
- Just before serving, garnish the tart with fresh passion fruit halves and edible flowers, if using.
- Optionally, sprinkle a bit more of the passion fruit powder on top for extra flavor and color.
