

Golden Bunny Easter Cake (Orange & Curcumin Flavored)

1 ½ cups all-purpose flour

1 tsp baking powder

½ tsp baking soda

¼ tsp salt

1 tsp curcumin powder (Organic Labs)

½ cup unsalted butter, softened

¾ cup granulated sugar

2 large eggs
-
1 tsp vanilla extract
-
½ cup fresh orange juice
-
Zest of 1 orange

⅓ cup Greek yogurt or sour cream
🍊 For the Golden Glaze:

1 cup powdered sugar
-
2 tbsp orange juice
-
¼ tsp curcumin powder
-
Orange zest or a drop of vanilla extract (optional)
👩🍳 Instructions:
1. Prep the Scene

Preheat oven to 350°F (175°C).

Grease your bunny-shaped cake pan 🐰 or any loaf/tin you like.

Lightly dust with flour to prevent sticking.
2. Mix Dry Ingredients

In a medium bowl: whisk flour, baking powder, baking soda, salt, and curcumin powder.

Set aside the beautiful golden blend.
3. Cream Butter & Sugar

In a large bowl, beat butter and sugar until pale and fluffy (about 2–3 mins).

Add eggs one at a time, beating well after each.

Stir in vanilla and orange zest.
4. Combine Wet + Dry

Add the flour mix to the wet mix in 2 batches, alternating with orange juice and yogurt.

Mix until smooth but don’t overmix.
5. Bake

Pour batter into the prepared bunny pan.

Bake for 30–35 minutes or until a toothpick comes out clean.

Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
🍯 Glazing Time

Mix powdered sugar, orange juice, and curcumin powder until smooth.

Pour over the cooled cake — let it drip for that rustic, Insta-drip look.

Optional: Add a “tail” using a mini frosted doughnut hole or marshmallow dusted in curcumin.
