In this video we used the technique of the traditional Zaatar bread but we have created our own filling with sweet flavors.
Ingredients
370g all purpose flour
25g sugar
1/2 tsp salt
40g cup butter of your choice
240g oat milk (warm)
2 tsp instant dry yeast
2 cups frozen raspberries
1/4 cup water
1/4 cup honey

1 tbsp @theorganiclabs Beetroot powder
1 tbsp chia seeds
1/2 tsp agar agar (dissolved in 2 tbsp water)
For the Dough
Beetroot and Raspberry Jam
Directions
For the Jam
Add frozen raspberries, water, honey, @theorganiclabs beetroot powder into a pot and shimmer until berries get soft.
Add chia seeds and dissolved agar agar powder, boil 2 min
Wait to cool down then transfer into the jar until needed.
For the Dough
Mix white flour with sugar, salt, instant dry yeast and warm milk
Knead the dough in a stand mixer with a hook attachment on a low-medium speed, add the butter(room temperature) and knead until the dough comes together, about 10min, then place in slightly greased bowl
Let it proof for 1 hour or until double in size.
Punch down the dough to release the air, transfer to a clean surface.
Divide dough in 3 portions by weight. Roll each out into a thin circle.
Place one circle on prepared baking sheet.
Top with chia - raspberry jam, then layer with another dough circle, top with jam again and add the third dough circle on the top.
Place around object in the center and make an indent
This is the center of the star.
Using a cutter, cut 16 even strips.
Using both hands, grab two strips and twist them away from each other few times, then press the two ends together to make a point
Repeat with all strips.
Cover the shaped bread with plastic wrap and let it rest for 20 minutes
Preheat oven to 175C.
Using a pastry brush, lightly brush the star bread with milk and bake for about 25-30 minutes.
